Easy, delicious pork chili verde.
Cut pork into 1-2 inch cube chunks.
Sprinkle with salt, cumin, and oregano; set aside.
Roughly chop tomatillos, peppers, and onion.
Add 1 tbsp of Olive Oil to pressure cooker pot.
Add tomatillos, peppers, onion, and garlic to pressure cooker.
Place cubed pork on top of peppers.
Pressure cook on high for 30 minutes, quick release.
NOTE: Don't pass fill line on pressure cooker pot. No need to add liquid to the pressure cooker, it will get enough water from the tomatillos and peppers.
After cooking, remove pork from pot and set aside.
Use an immersion blender and puree all ingredients in the pot.
Add pork back into the pressure cooker pot.
Add cilantro and fish sauce.
Mix to combine.
Serve with corn tortillas.
