Ingredients
  • 3 cups Bread Flour
  • 3/4 teaspoons Salt
  • 1/2 teaspoon Instant Yeast
  • 1 1/3 cup Cold Water
  • 5 ounces Katamala Olives (pitted and drained)
  • 10 Garlic cloves (halted)
  • 2 tablespoons Italian Seasoning
  • Parchment Paper
Instructions
    Start the Dough
  1. Combine flour, salt, yeast, and Italian seasoning in large mixing bowl.

    Mix until evenly combined.

  2. Add water and mix until large single ball of dough.

    Add olives and garlic and mix into dough.

  3. Cover bowl and let rise for 12-18 hours. Dough should double in size. (usually overnight)

  4. Lightly dust with flour, fold dough a couple times, cover and let sit for 2 hours.
  5. Bake the Bread
  6. Place 6qt. Ceramic Enameled Cast Iron Dutch Oven into oven and Preheat oven to 455 degrees. (Let the Dutch oven get up to the same temp as the oven).

    Place dough on parchment paper and place into hot Dutch Oven.

    Bake covered for 30 minutes.

    Remove Dutch Oven lid and bake for 15-30 mins depending on how you like your crust.

  7. Remove Bread from Dutch Oven and let it fully cool before cutting.
