Ingredients
  • 2 cups White Rice
  • 2 cups Water
  • 2 teaspoons Tomato Bouillon
  • 15 ounces Red Enchilada Sauce (can)
  • 1 tablespoon Olive Oil
  • 2 Limes (juiced)
  • 1/2 Cilantro bunch (finely chopped)
Instructions
  1. Place oil, rice, water, enchilada sauce, and tomato bouillon in pressure cooker.

    Set pressure cooker to high and natural release.

    Pressure cook for 8 minutes and allow natural release for 10 minutes.

  2. Fluff rice.

    Mix in lime and cilantro.

    Serve.
