Ingredients
  • 1 Chicken Carcass (add bones from wings, legs, and thighs)
  • 1 Yellow Onion (peeled and quartered)
  • 2 Carrots (medium cleaned and quartered)
  • 3 Celery Stocks, cleaned and quartered (cleaned and quartered)
  • 1 Bay Leaf
  • 1 tablespoon Whole Pepper Corns
  • Salt
  • Water
  • Optional
  • 4 Garlic Cloves (smashed)
  • 5 Thyme sprigs
  • 1/2 Fresh Parsley bunch
  • 2 tablespoons Apple Cider Vinegar
Instructions
  1. Add Ingredients to pressure cooker.

    Add optional ingredients and adjust amounts to your taste.

    Add water and make sure to stay below the max fill line (roughly 2/3 of the pot).

  2. Pressure Cook on high for 1.5 hours (90 mins).

    Set to natural release for 30-45 mins.

    Remove lid once pressure is fully released.

  3. Strain and discard all solids. Helps to remove large bulky items first.

    Use a fat separator is preferred.

    Add additional salt to taste.
