Directions

Place oil, rice, water, enchilada sauce, and tomato bouillon in pressure cooker.
Set pressure cooker to high and natural release.
Pressure cook for 8 minutes and allow natural release for 10 minutes.

Fluff rice.
Mix in lime and cilantro.
Serve

Ingredients

 2 cups White Rice
 2 cups Water
 2 tsp Tomato Bouillon
 15 oz Red Enchilada Sauce, can
 1 tbsp Olive Oil
 2 Limes, juiced
 ½ Cilantro bunch, finely chopped
