Makes 1 cup of dressing. Enough for 4-5 large romaine hearts. Serves 6
Add Anchovies paste and garlic into a large bowl.
Mash with fork to create smooth mixture.
Incorporate remaining ingredients (in order) one at a time.
Whisk together mixture before adding next ingredient.
Clean and Course chop romaine.
In large bowl toss romaine with dressing.
Add croutons, lightly toss.
Top with Romano cheese and ground pepper.
