Easy and delicious one pot dinner. Can use almost any type of protein but best with chicken or salmon.
For Chicken, use 1 lb of shredded rotisserie chicken.
For Salmon, use 1.5 lbs of raw salmon, skin removed.

Preheat oven to 400 degrees.
Add all ingredients, except pasta, to an enameled cast iron pot.
Bake at 400 for 30 minutes.
While other ingredients are baking, bring water to boil over stove and cook pasta per package instructions.
Set aside.
After main dish has baked for 30 minutes, remove from oven and add cooked pasta.
Stir everything to incorporate ingredients and make sure to break apart tomatoes.
Serve in pasta bowl, top with grated parmesan and parsley.
