  • 8 ounces Sour Cream
  • 1 stick Butter (melted)
  • 1 cup Cheddar Cheese (shredded)
  • 8.5 ounces Jiffy Corn Muffin Mix
  • 1 can Creamed Corn (14.75oz)
  • 1 can Whole Kernel Corn (15.25oz can drained)
  1. Preheat Oven to 350 degrees. (Leave skillet in oven to heat up with oven)

    In a large bowl, combine all ingredients except for the cheddar cheese.

    Pour into a 10-inch cast iron skillet.

  2. Bake uncovered for 45 minutes.

    Top with shredded cheddar.

    Bake for an additional 10-15 minutes, until the top begins to brown.

    Let rest for 5 minutes, then serve.
